Stay on track this 4th of July Weekend!

Holidays, events and birthdays can throw any dedicated lean eater "off track".

One philosophy that I always reinforces when it comes to losing weight is that it's not about being 100% perfect.

Why set yourself up for failure, when you can aim for 90% compliance -- and plan those meals of celebrations and holidays so you don't get thrown off track and perpetuate the on-and-off again cycle?

In honor of Independence Day this weekend, I’mis sharingone of my favorite quick and easy healthy recipes that will have your guests coming back for seconds and you staying on track with your health goals.

We love this refreshingly light, gluten-free recipe that is full of great flavor and fun colors. Recipe and photo credit goes to Will Cook For Friends.

Watermelon Salad
2 lbs. fresh watermelon, cut into cubes (1/2 – 1 inch)
1 cup jicama, cut into cubes (1/4 – 1/2 inch)
1 large cucumber, optionally peeled, cut into cubes (1/4 – 1/2 inch)
1 pint blueberries
1 handful fresh basil, chopped (maybe 1/4 cup)
1 small handful fresh mint, chopped (maybe 1/8th cup)
1/2 lime, juiced

Method
Combine all ingredients in a bowl. Cover, and refrigerate for 1-2 hours or until well chilled.

Enjoy!
**You can also substitute the lime juice for a vinaigrette dressing
